High-pressure food processor unveiled at Geneva research facility

The New York State Cornell Agricultural Experiment Station in Geneva is now using a new high-pressure food processor that targets microorganisms which cause food to spoil.

The Hiperbaric 55 is a commercial-grade processor which is the first that has been installed in the U.S. within a Biohazard Level 2 facility, which means that researchers will be able to introduce pathogens to foods and test how well the pressure system kills them.

Officials say that is especially important for manufacturers of fresh, packaged, ready-to-eat foods and it will help set food safety standards.

New York State provided $600,000 as part of an effort supported by the Finger Lakes Regional Economic Development Council in the Finger Lakes Forward Plan.

Wegmans, Lidestri Foods, Hiperabaric and Suja Juice also provided financing for the equipment.
